Originally from Glenelg, South Australia, the owner and
Managing Director of Simply Sushi Mr. Peter D. Sibly spent
over 15 years living and working in Asia and the Pacific Rim.
Initially for Fortune 500 Company Inchcape PLC in the field
of Corporate Business Insurance before starting his own company,
Allied Insurance Services Inc. (AIS) in 1997.
AIS grew substantially over the next 6 years and in
December 2003 AIS was sold to a large Japanese
General Insurance Agency, Takagi and Associates, Inc.

During Mr. Sibly’s time in Asia and the Pacific Rim
he became fascinated by the simplicity, elegance and
wonderful flavours of Japanese Cuisine and Sushi in particular.
Over time the quest to experience the best and most
interesting Sushi dishes available became a passion.

In 2005 Mr. Sibly and his family returned to Adelaide,
bringing with him two qualified and experienced Sushi Chefs.
The goal to open a Japanese restaurant that provides authentic
contemporary Japanese Cuisine and the finest, freshest
and tastiest sushi dishes available, in an elegant and relaxed atmosphere.

Simply Sushi Restaurant is the result, which opened June 19th. 2006.
